Mojitos in our home are made with our own simple syrup using honey. Boiling this sweetness with mint and lime not only enhances the bold flavours of this trio but melds the mixture to create a healthier and more subtle version of this classic sugar water mix. Plus, substituting honey for refined sugar means we can enjoy even more mojitos guilt-free.
Honey Simple Syrup | In a small saucepan, heat all of the ingredients for the Honey Simple Syrup and bring to a full boil. Immediately remove from heat and let stand until cooled to room temperature. Strain through a fine mesh strainer, discard the mint leaves, and refrigerate the syrup in a jar until ready to use.
Individual Serving | For one cocktail serving, muddle or chop 5-8 mint leaves with lime zest. Rim your glass with lime juice and dip into the lime salt then fill your glass with ice, add the muddled or chopped leaves and add 2 tablespoons of the honey simple syrup, 2 ounces of white rum. Top up your drink with sparkling water and a squeeze of lime juice.
Pitcher Serving | To prepare a large batch of mojitos, add all of the syrup to a large pitcher, along with 12oz of white rum. Stir well, then add 1L of sparkling water. Stir well again and pour mojitos into glasses with ice, lime zest and muddled or chopped mint leaves.
