Ingredients

  • 10 slices bacon
  • 5 jalapeños
  • 250 g cheddar cheese
  • 250 g goat cheese room temperature
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • 1 baguette
  • 1 clove garlic
  • 3 tablespoon butter

Instructions

  • Preheat oven to 400°.
  • Lay bacon slices and whole jalapeño peppers on a wire cooling rack placed on top of a baking sheet. Bake in the preheated oven for 15-20 minutes, until bacon is crispy. Remove, but keep the oven on.
  • While bacon and jalapeños are baking, prep your other components. Cut ½ inch slices of baguette and rub both sides the with garlic clove. Grate or slice cheddar cheese and set aside. In a bowl, mix together softened goat cheese, paprika, and chilli powder.
  • Melt 1 tablespoon of the butter in a skillet on medium heat. Pan fry 6-7 slices of baguette until golden, flip and fry the other side. Repeat until all bread is toasted.
  • Assemble the crostini by placing cheese on the bread. Smear about half a tablespoon of goat cheese mixture on a half slice of bacon and place on the cheddar. Top with a few slices of jalapeño.
  • Arrange the crostini on a baking sheet and place in the oven until cheddar cheese is melted, about 5 minutes.
