Pumpkin Spice Latte

- ½ cup canned pumpkin 100% pumpkin
- ¼ cup maple syrup
- 1 tablespoon vanilla
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon ground cloves
- 1 pinch salt
- 2 cups coffee freshly brewed
- 1 cup coconut milk plus ½ cup for topping
In a saucepan, heat together coconut milk, pumpkin, maple syrup, vanilla, cinnamon, nutmeg, cloves and salt.
Allow to simmer, covered, for 30 minutes. Add coffee and simmer for additional 5 minutes.
Meanwhile, using a hand immersion blender, froth the ½ can of cold coconut milk.
Pour latte mixture in a mug and top with frothed coconut milk.
