Preheat the oven to 425°F. Clean and slice the onions and peppers.
In a large mixing bowl, toss peppers and onions with olive oil, salt, and pepper.
Arrange the sausages in the peppers and onions. Roast on the lower middle rack for 30 minutes.
Slice the sausage buns in half lengthwise. Arrange on a sheet and top with grated provolone cheese.
Toast the buns on the upper rack of the oven until the cheese is melted and the edges are crisp.
