We love a good food trend. Whether it’s based on Pinterest, Google searches or even #FoodTok, leveraging food trends is one of our favorite ways to brainstorm new ideas or revisit our favorites. And when the foods you already love become a trend, well it gives you an advantage to truly embrace it, and makes you feel as though you kinda, sorta invented it, right?

If there’s anything we’ve learned from the ricotta toast trend it’s that quality, simple ingredients always make for the most delicious recipes — just ask Lizzo. Our Ricotta Toast with Cherries is an easy-to-prepare, on-the-go recipe filled with good nutrients that power us through the day, keeping us focused and full.

And when you make homemade ricotta yourself, using just milk, salt, and lemon, it’s a smooth and creamy addition to your favorite recipes or trends – like the Ricotta Toast Trend, guaranteed to have you, well… feeling good as hell (again, ask Lizzo).

Sweet, tart, and incredibly satisfying, our Ricotta Toast with Cherries, Walnuts and a drizzle of Honey is a versatile breakfast that can easily be revamped by simply switching up the toppings or the bread. Don’t like sourdough? Try cinnamon raisin bread. Cherries not in season? Try peaches. Walnuts not your thing? Swap them for seeds or even granola. The choices are endless when it starts with a fresh ricotta base.

    Ingredient List

Ingredients to make Homemade Ricotta Toast with Cherries
    • Sourdough bread: freshly baked sourdough is preferred, but use any of your favorite breads.
    • Ricotta Cheese: store-bought or try making your own fresh ricotta cheese.
    • Fresh Cherries: sweet cherries are best. Peaches, plums, and berries are also great.
    • Walnuts: add fat and texture to the recipe.
    • Honey: use raw, unpasteurized honey if available.

See the recipe card for full information on ingredients and quantities.

    Variations

The possibilities are endless with ricotta toast. Some of our favourite combos are sliced pears with honey and walnuts, strawberries and granola, and sliced tomatoes, balsamic and basil.

Recipe Steps: How to Make Homemade Ricotta Toast

Slice bread about half an inch thick and toast until desired doneness is reached.

Meanwhile, crush the cherries using the side of a knife and remove the pits. Transfer the cherries and any juice to a bowl for assembly.

Dollop ricotta cheese on top and spread it out on the toast, creating divots. Arrange the cherries on top and sprinkle with crushed walnuts. Drizzle with honey and additional juice from the bowl of cherries. Add a few leaves of mint if available. Serve immediately.

    Top tip

Ensure the ricotta is creamy, if it's too dry, add a touch of cream or milk to thin it out.
